Zucchini Linguine with Clam Sauce

Who doesn't love Linguine with Clam Sauce? I know I can't get enough of it, but what I can get enough of is calories and simple carbohydrates.

Much of the food I make is inspired by the unhealthy versions of food that I enjoy, because lets face it, there is no use in fighting cravings (they often come back with a vengeance) instead why not turn your unhealthy craving into something healthy that you will not feel guilty about enjoying (and you won't need to unbutton your pants either).

Zucchini Linguine with Clam Sauce

Servings - 2

Ingredients:

  • 1 shallot, diced

  • 1 clove garlic, diced

  • 1 can chopped clams

  • 1/2 cup clam broth

  • 1 lemon, juiced

  • 1 zucchini, spiralized

  • 1 squash, spiralized

Instructions:

MAKE THE CLAM SAUCE - Place a pan over medium high heat add 1 T EVOO the shallot and garlic, sauté until fragrant. Add the chopped clams,broth and the juice of lemon and let simmer and reduce slightly.

PREPARE THE LINGUINE -Using a spiralizer or julienne peeler prepare the zucchini and squash.

FINISH THE DISH - Add the zoodles (zucchini noodles) to the pan with the sauce and sauté 3-4 minutes until noodles soften slightly and are covered in the sauce. Remove from heat and serve.

This dish can also be done with fresh clams, you can add them into the pan as the sauce is reducing.
