Miso Leek Soup

The temperature is dropping in NYC which means it is officially soup season in my house.

As you already know I like to create simple quick dishes with just a few ingredients that one may have on hand. Today's soup is no different; I always have miso in my fridge, if you don't get some it is great to have around for soups, sauces and marinades not to mention it has some major health benefits.

While vegetable miso soup is a staple around here I wanted to kick it up a notch on the health factor and that is where the leeks come in. Leeks are in the same family as garlic and onion but they are much more mild. Leeks are full of fiber, vitamins, minerals and some powerful antioxidants. Leeks can help with weight loss and inflammation so this is a great soup to sip on if you are looking to shed a few pounds of holiday weight.

Miso Leek Soup

3-4 servings

Ingredients:

  • 1 T EVOO

  • 1 Leek, chopped

  • 2 cups vegetable broth

  • 2 cups water

  • 2 T miso

Instructions:

PREPARE THE LEEKS: In a large pot add oil. Once warm add leeks and sauté until soft, about 2 minutes. Add broth or water to the pot and bring to a boil. Lower heat and let simmer for 10-15 minutes.

MIX IN THE MISO: Add a ½ cup broth from the pot to a small bowl. Add miso to the bowl and mix miso until dissolved. Add the miso broth back into the pot and simmer for 2 or 3 minutes (miso should not be boiled because it will kill the beneficial bacteria). Remove from heat and serve.

Thats it, easy and delicious and takes just 30 minutes from start to finish.
